Hello everyone, today we are going to make one of our very French desserts: the macaroons
Preparation time: 25 minutes Chilling time: 12 hours Cooking time: 20 to 25 minutes
For 20 macaroons You will need a pastry bag
Ingredients:
- 4 egg whites
- 220g powdered sugar
- 120g almond flour
- 50g powdered sugar
- 30g of cocoa powder
For the ganache:
- 100g dark chocolate
- 50ml of milk
Preparation:
The day before, place the egg whites in a cool place
Prepare the ganache: melt the chocolate in a bain-marie
Add the milk, mix and set aside in a cool place
The same day, preheat the oven to 160°C (th. 5-6). Mix the powdered sugar and almond powder. Spread this mixture on a baking sheet. Bake for 5 to 10 minutes to dry well.
Beat the egg whites in a bowl until stiff, then gradually add the powdered sugar, whisking constantly.
Add the cocoa powder to the sugar-almond mixture
Gently fold the cocoa-sugar-almond mixture into the stiffly beaten eggs with a spatula.
Pour this mixture into a pastry bag fitted with a smooth tip
Form regular discs of dough on the baking sheet covered with parchment paper.
Set aside for 20 minutes, then bake for 12 to 15 minutes. Let them rest for a while, then run a little water under the parchment paper to make them easier to remove.
Mix the ganache with a spatula, then fill half of the macaroon shells with it. Cover with the other half of the shells. Keep the macaroons in the refrigerator.
