Hi everyone, today we'll make a French pastry
Preparation: 35 minutes (excluding puff pastry) Cooking time: 40 minutes
Serves 6
Ingredients:
- 3 egg yolks
- 30g powdered sugar
- 35g of flour
- 50g powdered sugar
- 1 block of puff pastry of 400g (recipe on my website)
- 25cl of cold full cream
- 25cl of milk
- 1 sachet of vanilla sugar
Preparation:
Prepare the custard cream: recipe on my site and put it aside
Preheat the oven to 210°C. Roll out the pastry to a large rectangle of 3mm thickness. Place it on the baking sheet and put it in the oven.
After 10 minutes, lower the temperature to 180°C and sprinkle the dough with powdered sugar. Place a sheet of parchment paper on top, then a second baking sheet to prevent the dough from puffing up; let it cook for 20 to 25 minutes.
Take the dough out of the oven and let it cool. Cut out a rectangle or square of cardboard and use it as a guide to cut out three rectangles in the dough with a bread knife.
Whip the cream with the vanilla sugar to a whipped cream.
Gently fold it into the pastry cream and keep it cool until the last moment.
Assemble the cake at the last moment: place a rectangle of dough on a board, then cover with half of the pastry cream.
Repeat these operations, then finish with the last rectangle of dough.
Decorate with powdered sugar and enjoy!
Here's how it turned out:
Hope you enjoyed it!!!
See you!
Alex
