Puff pastry

Hello everyone, today we will make a puff pastry

For 800g of dough Preparation: 30 minutes Refrigeration: 6 hours


Ingredients:

- 350g of flour

- 35g of soft butter

- 250g of cold butter

- 1/2 teaspoon of salt

- 130g of water


Preparation:

  1. Prepare the tempera. Put the flour, soft butter and salt on the work surface and add the water. Knead quickly until you get a homogeneous mixture.

  2. Gather the tempera into a ball, wrap it in cling film and put it in the fridge for 2 hours.

  3. Take the butter out of the refrigerator, place it between 2 sheets of parchment paper and spread it out to obtain a square of about 20cm.

  4. Flour the work surface and roll out the tempera into a rectangle of about 22 x 42cm, then place the butter on top of the rectangle.

  5. Fold the dough over the top and pinch the edges together.

  6. Turn the dough a quarter turn to the right and roll it out so that it is three times as long as it is wide.

  7. Fold the dough into a wallet.

  8. Mark the dough once with your thumb to indicate that you have given it 1 turn. Shrink-wrap it and refrigerate for 2 hours.

  9. Repeat steps 6 and 7 and refrigerate for 2 hours. Make 2 marks to remind you that you have given 2 turns.

  10. Repeat steps 6 and 7. The dough is now ready to use. If you do not use it immediately, keep it in the fridge.
