Hello everyone, today we make a dish with chicken
Preparation time: 20 minutes Cooking time: 20 minutes
Marinating time: 20 minutes Serves 4
Ingredients:
- 4 chicken fillets
- 1 pinch of saffron or turmeric powder
- 1 organic lemon
- 2 onions
- 1 fortnight of purple olives
- 2 carrots
- 1/2 bunch of coriander or flat parsley
- 1 tablespoon of honey
- 1 handful of whole almonds
- Olive oil
- Fine salt and freshly ground pepper
Preparation:
Cut the chicken into pieces, place them in a dish. Pour 3 tablespoons of olive oil on top, add salt, saffron or turmeric and mix. Let marinate for about 30 minutes. Zest the lemon in the marinade, add the olives. Mix again. Cut the lemon in half, keep one half aside, cut the other half in half in the marinade. Stir and season with pepper.
Peel and finely chop the onions. Peel and slice the carrots. Rinse and dry the herbs well.
In a casserole or large frying pan, pour a dash of olive oil, let it heat up, then put the onion to brown gently. Add the marinated chicken and the marinade, caramelize over high heat with a little olive oil if it is missing. Add the carrots and stir well. Pour a little water into the chicken marinade dish and pour it back into the cooking dish. Lower the heat, cover and cook for 10 to 15 minutes.
Check the cooking of the chicken, the juice must be well reduced. Add the honey, transfer to a serving dish, sprinkle with coriander leaves or parsley and whole almonds.
