Hello everyone, today we will make a Thai dish
Preparation time: 20 minutes Soaking time for noodles: 1 hour
Cooking time: 10 minutes Serves 4
Ingredients:
- 300g rice vermicelli or rice noodles
- 2 chicken breasts
- 10 raw shrimps
- 2 spring onions
- 3 cloves of garlic
- 2 eggs
- 250g of bean sprouts
- 50g of unsalted peanuts
- 1 lime
- Sunflower oil
For the sauce:
- 10cl of nuoc-mâm sauce
- 50g of powdered sugar
- 100g of tamarind paste
- 1,5cl of white rice vinegar
- 2 tablespoons of siracha pepper sauce
- 1 tablespoon of soy sauce
Preparation:
Soak the vermicelli or rice noodles in a bath of warm water for 1 hour.
Prepare the sauce in a bowl: pour the nuoc-mâm sauce with the sugar, tamarind paste, rice vinegar, siracha pepper and soy sauce. Set aside.
Cut the chicken into cubes. Peel and devein the shrimp by splitting them on the back. Peel the garlic and chop it. Chop the spring onions. Crush the peanuts
In a hot frying pan or wok, pour a dash of olive oil and cook the chopped garlic for 2 minutes without colouring, then add the chicken. Let it brown for a few minutes. Push the meat to one side and pour in the beaten eggs and start cooking like scrambled eggs. Add the drained noodles and bean sprouts, onions and half of the peanuts and continue to cook over medium heat for about 5 minutes. Finally, add the shrimp and sauce. Mix well.
Serve with lime wedges, lime zest and sprinkle with peanuts.
