Potato blinis, sour cream, smoked trout

Hello everyone, today we are having an aperitif

Preparation time: 20 minutes Cooking time: 20 minutes

Serves 4


Ingredients:

- 4 slices of smoked trout/salmon

- 150g of potato

- 2 eggs

- Nutmeg or cumin powder

- 1 shallot

- 10cl of fresh cream

- 1 bunch of dill

- 1 dash of olive oil

- Juice of a lemon

- Coarse salt

- Sunflower oil for cooking

- Fine salt and freshly ground pepper or Espelette pepper


Preparation:

  1. Peel the potatoes, dice them, rinse them, then cook them in a pot of boiling water with coarse salt for 12 minutes. At the end of the cooking time, drain them in a bowl and mash them with a fork. Set aside.

  2. Separate the egg whites from the yolks. Mix the yolks with the mashed potatoes. Season with salt and pepper and nutmeg or cumin. Beat the egg whites until stiff, then fold them gently into the mashed potatoes with a spatula.

  3. Peel and slice the shallot, chop the herbs, place in a small bowl with the crème fraiche, add a dash of olive oil and the lemon juice, season with salt and pepper or Espelette pepper and set aside in a cool place.

  4. Cut the trout or salmon into strips. Set aside.

  5. In a hot pan oiled with paper towels, place 1 tablespoon of potato paste to form a blini. Repeat several times. Wait for bubbles to form on the surface, turn the blinis over and allow to brown, about 1 minute.

  6. Place the blinis on the plates. Top with the sour sauce, spread the strips of trout or smoked salmon, and garnish with a sprig of dill. Bon appétit!!!
